I tend to have used single layer DVD-R discs in the past, which tend to be compatible with most DVD players. I was thinking of using dual layer DVDs instead - are there any compatibility issues with these? Any particular sort I should go for?

Dual Layer DVD+R from Verbatim works fine with Sony DVD players.

Verbatim dual layer DVD+R are the only ones that I have had success with. Eveything else i tried produced coasters!!
